I can't remember any one scripting defensive plays. If you wanted to you would have to know the team you are playing and know pretty well what offense they run and what plays they call. But it is too hard to script cause situations during the game come up and the coaching staff must adjust to the situations. I only remember coaches scripting offensive plays and really only the first 10 or so. Personally I don't like scripting I may have a idea what plays I want to call and in what down and distances I want to call them . But I won't know when these downs and distances are coming so I just would wait until that situation arises.

you dont really script defensive plays so much. defensive plays are more dictated by the the formations the offense is in. if you scripted a run blitz and the offense lined up in a 4 wr set you would be forced to change the play or give up a potential long pass play.

you script offensive plays. you might start the gameplan with the first 25 plays already decided. coaches do this to make sure they stick to a gameplan. you may have plans to set up plays later on by running the same running play 4 or 5 times within the first 25 plays and then on the 26th play you run a play action pass. by scripting the first 25 plays it is easier to make sure you have set the defense up for the play fake

It's situational. Example:
Your red zone: zone blitz
Their 10 yard line to their goal line: zone blitz
their 10 yardline to your red zone:
play nickel (since your team is having trouble, it's one of the better all around formations)
3rd down and long: prevent defense (switch to a dime package)
3rd down: man to man
2nd and long: zone blitz
2nd down man to man, zone change up
2nd and short play the run with the line backers and the free safety
1st and long: zone
1st and 10: man to man, zone, zone blitz
1st and short: man to man, zone blitz

Since they are just in high school, you might just want three different zones defenses and 3 types of zone blitzes. In reality, most players would need to learn their three or four directions depending on the play, but because you got 11 men on the field you can fool the opponents into thinking you have more than 9 plays.

Teach them how to play zone and how to play man to man, how to tackle and how not to get faked out on the juke (watch the hips). Learning to strip the ball might be too hard for them if they aren't that great of a team. The same goes for chasing the ball rather than the other players.
