better use the word ONE to start your sentence.

One of the things that our club is planning on doing is having a "walk-a-thon" in order to raise money.

just so we can make your sentence grammatically correct (subject-verb agreement).

to use SOME:
SOME of the things that our club is planning on doing ARE having a "walk-a-thon," baking then selling cookies and having a garage sale in order to raise money.

ONE of the things we are planning on doing is having a walk-a-thon... etc.

You should say one because you've only said one thing.. If you were going to say a list of things it would be Some of the things we are planning on doing ARE... and then you would say having a walk a thon, a bake sale.. etc. You know you would have to have a list of things to use are.

Yes, change "some" to "one" (unless you can add another activity to the sentence, in which case you would need to change "is" to "are"), but also, change "planning on doing" to "planning to do" or just "planning."

How about this: "One fund-raiser the club is planning for ______ is a walk-a-thon."

I think the action you are going to do is usually expressed 'to-infinitive', on the other hand, the action you are doing or you have been doing is expressed 'ing-form'.
How about this;
