Well, they had alot of practice. the egyptians had been building pyramids for centuries, experimenting with things, etc.
Theories abound as per the specifics, but keeping it level was a matter of a water ditch or even a trough. If the water was higher on one side than the other...
But the major building was done while the Nile was flooded; making it easy to bring the stones to the site. Presumably mud or some other agent that reduced friction & alot of men were used to get the stones to the specific places they needed to be. They would easily mound sand up (wooden scaffolding is false; wood in a desert isn't easy to find) to make ramps & what not.
As per keeping it straight, a simple tool was used- 2 sticks in the ground; look from one spot to the other, and see if it was straight. And technically, the inner stones didn't have to be precisely NSEW
But like I said; they also had alot of practice before the Great Pyramid

The Spinx of Giza was carved out of existing rock. The parts they chopped off were used to build the surrounding temples. Slave labor was used for this.

We dont really know. Its like the Stonehenge or the statues on Easter Island, its impossible to pull a massive block of stone and even to pull it right up to the top.
What ever you hear or read, its only what historians think. We arn't so sure. Who knows we might never find out or if we do find out that would be when we have better technology.
But I have my own impression of how the Pyramids were built. If you want me to say, please tell. I am happy to tell you.

all the men in egypt worked day and night, whenever they werent farming. they had these track things that helped get the blocks to the pyramid, too. and the blocks were brought to giza by using boats.

I have heard of two or three explanations. But I personally don't know if it is actually how it was built. I think I will rule out the UFO explanation. It's fascinating. I don't think even modern equipment can do it.

by hand.. thousands of men.. the used man made lifts... u know.. the old rope thing... with a pully.. to get the rock up high.. i saw a doc. once on the history chanel
