Depends on your state laws and how willing your employees are. You have to pay time and a half for anything over 40 hours a week. If your employee would like to store the time - and will not later turn your in for not paying - you can store it at time and a half. Now - fix the problem of unauthorized overtime. There was either a coverage problem, or your employees were trying to get extra money.

As an employee, I know the employer is the be all and end all of the business, if you didn't want me to stay over that would be your choice. This would be be like being charged extra for something you didn't want done, warn them and make them leave early one day to compensate, and make it clear to ewveryone you are the boss.

If they were allowed to work, even if you didn't authorize it, you have to pay them - but you can fire them for doing that (after you pay them - I'd warn them first, the first time it happens). Who is the supervisor? That person should be the one to ensure people don't work unauthorized time.
