Weathering and erosion and lots and lots of it.

Soil also has an organic component as well from things that have decomposed like leaves, animals, etc...

You mean "how DOES the Earth's rock surface become (not becomes) soil".

Erosion by wind, rain, ice, heat, etc. breaks the rock down to smaller and smaller fragments.
Add water, organic material (such as decomposing leaves, mulch, or organic fertilizer), and a few earthworms to stir up it all up and make more fertilizer and you have soil.
