fishes are aquatic animals and are adapted to utilize oxygen dissolved in water they live in.
for uptaking of atmospheric oxygen different respiratory system and mechanisms are there like in terrestrial animals such as mouse etc including humans have respiratory system made up of nasal openings, trachea, bronchii, alveolis,etc .
but fishes have respiratory system adapted to aquatic conditions consisting of gills.
so fish cant respire out of water and die due to lack of oxygen when kept out of water....

Because fish are designed to get their oxygen from water by moving the water over and through the gills. No water, no oxygen.

It's not water it can't live without. It's air. Fish can't breathe, they have to pull air from the water by using their gills. So, no water, no air for them to process. They don't die of thirst, they suffocate.

It's gills are designed to filter oxygen out of aeration in the water. It can't filter oxygen out of the air.
