i'm picking up a new car next year in Stuttgart, Germany. Need suggestions as to where i need to stop at before dropping car off in London or Ireland.

I would say, stay in the countryside, visit the small villages, stay in small hotels, bed and breakfast places or bring camp-gear and stay on the many campsites.
Of course, you can also visit all the big towns, but cars in towns are a pain in the 'unnamed' places.

Take a good road map and just see where the road brings you. Of course, you can make sure that there are several interesting places underway, but on a trip that long you can not miss those.

Many countries have road signs pointing to touristic interesting places, (often brown,) just follow those and have fun.
For this kind of travel it is useful to have a good guidebook, one geared to traveling by car.
(Lonely planet, though very good for accommodation in the bigger towns and traveling with public transport, are not the best for the small towns that are easier to reach by car.)

If you want to visit the big towns you pass, park your car, either in a village near, or find a safe parking at the edge of town, and use public transport to the center of town.
