early in the game, there is a mission where there are goblins about to attack a chocobo. turns out that was the chocobo that delita rode off on.

if you choose to help the chocobo and beat the goblins while keeping the chocobo alive, it will join your team. as you walk with it, it will eventually lay eggs that will hatch into other chocobos (yellow, black, or red types)

as well, if you have someone with a mediator's skill to talk, and also have the support ability "monster talk" you can simply ask monsters (chocobos included) to join your team
