In soccer cleats what is the difference between soft, firm and hard ground?

In general, the softer the ground the longer the cleats should be. The best kind of shoe to get is those with changeable studs, and always keep different length cleats in your equipment bag. That way you can adjust for each game.

If you are going to get a molded-sole shoe, you will not be able to change the cleats. In that case, there are 2 different opinions on which to get. The first idea is to get a shoe with medium length cleats, in order to compromise. The second is to get a shoe best suited for your home field, as you will probably play half your games there.
