Because Easter is celebrated during the Jewish Passover (which is when the Passion took place.) Because the Hebrew calendar is lunar, it changes every year. Christmas was established using the Roman (solar) calendar, therefore it never changes.
25 December is an arbitrary date anyway.

Hi Jesus was initiated the memorial celebration on nisan 14 of the the year 33ce the days ran from evening to evening, He was killed on Nisan the 14 later that day and ressurected to life sometime on Nisan 16 They used the Moon to calculate time at that time the Jews evidently waited until the spring equinox. this is the day when there are approx 12 hours daylight 12 hours darkness. the 1st observable new moon nearest the spring equinox marked beginning of Nisan and the 14 days later the events took place. Christmas remains the same because Christmas has its roots not in Christianity which some may believe but rather has Pagan origins, It was not recorded within the new testament, the 1st century Christians made no mention of itin the Bible

Christmas was given a set date, but Easter follows 40 days after Ash Wednesday. And Ash Wednesday changes date depending on the moon, believe it or not.
Edit this for correctness:
"In Western Christianity, Easter is always celebrated on the Sunday immediately following the Paschal Full Moon date of the year.
In actuality, the date of the Paschal Full Moon is determined from historical tables, and has no correspondence to lunar events. In the year 325 AD astronomers approximated the dates of all the full moons in the year for the Western Christian churches. These were called the Ecclesiastical Full Moon dates, and they have been used ever since 326 AD to determine the date of Easter. So, the Paschal Full Moon is always the first Ecclesiastical Full Moon date after March 20 (which happened to be the vernal equinox date in 325 AD).
The Paschal Full Moon can vary as much as two days from the date of the actual full moon, with dates ranging from March 21 to April 18. As a result, Easter dates can range from March 22 through April 25 in Western Christianity."
So, Ash Wednesday is based on when Easter is each year - my bad. And Easter sets the date for the other movable feasts.

Easter is meant to represent Rebirth, the Arisen Christ, the new Spring.
It's determined by the first Sunday, after the first full moon, after the Equinox.

The holidays are based on the traditional dates of the holidays they replaced.
I think that Christmas replaced saturnalia and Easter replaced Oester.

its because easter has to follow a pattern: it goes after good friday (not all fridays are on the same date) and it has to be on a sunday and monday, so obviously, it cant always be the same day
