I have made several cutting boards including one butcher block chefs table. I used mineral oil on all of them. This is the same stuff you can get at you local drug store.
It is inert and will not go rancid or spoil. It is safe to put in food and is suggested by some doctors as a stool softener.
Vegetable oil will oxidize in time or become rancid and is therefore not considered the best choice.

Mineral oil. Do not use any cooking oil on it as it will turn rancid. You can look at any of the sites for making cutting boards and this is what they recommend.
