I was going to make chilli mussels and it was too hot to cook. They have all been cleaned and debearded this afternoon and now they are in my fridge. Can I cook them tomorrow or will they die overnight

Keep them in water & they will be OK

Just use the normal method for checking when you cook them.

If they are open before cooking, and don't close when you tap them on something, throw them away.

If they don't open during cooking, throw them away.

Mussels, like any other shellfish, should be cooked immediately. If some of the shells are open, it means they are dead. If you hadn't cleaned them, they can be kept alive in a basin of salted water for a few hours.
