okay, you know those little poles that have the gold cap on top and are always next to something like a big gap between two spaces, and you can get on top of them? well, what are they? and how do you use them?

Once you get the hookshot, use the hookshot to connect them with the rope. Then you can use that as a tightrope to get to the other side. Also you can use them as a slingshot.

Once you go through the ice dungeon you'll get a tool that allows you to use those. It's a hookshot that can either creat a tightrope between two poles/chests/torches or pull you toward the target item
You can also use it to throw two Cocco''s together :)

They're used with an item you get near the end of the game. (Second to last dungeon I believe) there's a way to link them so you can cross the gap with that item.

those poles are for the grappling hook. you can hook onto those using the grappling hook, or you could connect two of those poles together to make a line that you could walk on.
