You cant do it thru itunes. It will only let you re add the songs you purchased.

You need a 3rd party program.

Go to download.com and search for a program called Music Rescue by kennettnet. It will scan your itunes and your ipod, tell you which songs arent in your itunes library, copy the songs you want to your computer, add the songs to itunes and rebuild your playlists if you want.

It will even copy videos.

I have been using this program for years on many diff computers. It is GREAT. There is no spyware or anything and is totally safe. It copies really fast, too. About a song a second.

It is free to use, but if you dont pay the 20 bucks then you will get a prompt every 50 songs asking you to buy it. You can just exit this prompt and it will keep going.

i just burned all the songs onto a dvd in data format, then re-imported them into itunes. From there, just erase and sync the ipod with the new computer, since nothing will really change. Authorize the new computer to use songs (only need to do this if the songs were bought off itunes) from your old computer by playing them and then typing in your password.

Firstly, do. not. sync! (I cannot stress that enough) Add the songs manually, sure it requires some work but in the long run it's so much easier, and you'll never lose your music. So, untick the sync option and add your songs manually. Next, click on "My Computer" > your iPod > (make sure you have the "Show hidden files" option ticked) > and copy your music folder into it.
Lastly, go to your new computer, load the songs onto it, and into iTunes, and (assuming the computer is online) click on the Store menu and Authorize the computer.
Bada bing, bada boom.

Hope this made sense; I've been up for 24 hours...

An iPod can be synced with only one iTunes account at a time. once you switched to a new iTunes account or a new computer. You have to authorize your iPod to it at first, then you can upload photos, music and video from iPod to computer. you can refer to this guide that helped me before for how to transfer files from iPod to computer
