My chorus teacher talked about this when I was in fourth grade.

Handel composed "Hallelujah". When King George II first heard it, he was so moved he stood up (you know, like a standing ovation) for the whole song. When the king stands, everyone has to stand. Thus began the tradition of standing up when "Hallelujah" is sung.

Hallelujah is the highest praise we could possible give 2 God.
He adores that praise the most so standing as a sign of respect, honor, praise, love, joy, etc
