I have used them to make Christmas ornaments for next year, gift tags, decopage ( I once saw a folding screen made from cut-up greeting cards, it was mid-Victorian, but what a great idea!)
Now I save all greeting cards, as I make Victorian style 3-dimensional and pop-up greeting cards, and I cut them all up and use the bits and pieces collage-style.
You can use them to make boxes for small gifts (there is a pattern, it is really easy. If I can find it, and if you want it, I will try to email it to you.) You can make them out of any pretty stiff paper.

Not out of date for some. Hope Haven, a nonprofit for mentally challenged, helps their clients make them into custom-made cards and they sell them for fund raising. Check with local organizations to see if anyone does that or knows where they do that, the librarian might know too.

Send them to soldiers? The iNet has addresses. Schools collect them for a myriad of uses. A senior citizen center here reuses the fronts and turns them into new cards for profit. Send one to Yahoo Headquarters and sign it Hello World! We even left one for the refuse collectors this year!

Cut out to shapes in the form of a christmas tree, slice and cut down middle of each about half way and then slot them together you will have a tree shape and use them as place mats with people names on.

When I was a kid we would use our old cards as gift tags.
We cut the front off and then put the two pieces together and used shears to cut out funky shapes. They were rather cute.
You could use them to gift wrap a few gifts.
Make a collage.

You could think about some people whom you (maybe) normally don't send cards to but you know personally to some degree, such as a mail and/or newspaper carrier, delivery man/woman (like UPS or FedEx), bank teller, administrative assistant, waiter/waitress, minister (if you attend church), doctor, dentist, veterinarian (if you have pets), librarian, or an elderly/shut-in person who lives in your neighborhood. There's a ton of good uses for extra cards and, while some people think them trite, most people appreciate an unexpected greeting. :)

some people keep the cards and set them out each year for decoration. i think u should just get a new box of cards cuz they're not expensive. if u've got new people u can give to this yr, tho, u could use the old ones.
