Southern roasted pecans are a GREAT treat!
2 pounds of shelled pecans
1 stick of butter
salt
papertowels
Preheat oven to 250
Melt butter in bowl in microwave and mix pecans in and stir well.
Place on sheet pan, in a single layer.
Put in oven and stir every 15 minutes, 5 times, this takes about an hour and 15 minutes. Just set a timer for 15 mins, every time you stir the pecans.
Remove from the oven and drain on paper towels and salt to taste. These are so good and I'm eating some as I type this!

Chocolate no-bake cookies are super easy:
2 cups sugar
1 stick butter (1/2 cup)
1/2 cup milk
1 teaspoon vanilla
2 1/2 tablespoons cocoa
1/2 cup peanut butter
3 cups oats
In a medium saucepan, combine all ingredients except peanut butter and oats and cook over medium heat. Let boil for 5 minutes, stirring constantly.
Remove from heat and stir in peanut butter and oats.
Spoon out quickly onto wax paper or aluminum foil. Cookies will harden as they set.
