I say Merry Christmas. But like, if I don't know the person too well, and I don't know their religion, I just say Happy Holidays, because it goes both ways.

If they don't celebrate Christmas because of religious purposes then Merry Christmas may be a bit offensive. If you don't care then Merry Christmas to all!
