Always order the special at any restaurant. If they don't have one, I like to ask the server what is their favorite, or the Chef's favorite.
Also, if they have something that takes a little longer, like Peking duck or some kind of whole fish dish, this will always be worth the wait.

Peking Duck has to be the absolute best - really lovely. Crispy duck, comes with pancakes, shredded cucumber and spring onion and hoi sin sauce. You can usually order a half or a whole duck. When the bring it to the table the waiter will usually take the crispy meat off the bone. It really is to die for. You put some meat, cucumber and spring onion in the pancake - spread the sauce on first then fold and eat - yum yum

Well, I think that the best chinese dinning and dishes would be Ho-Wah it has awsome food and the service is great, and if you have kids it even has a buffet.

there are 4 distinct cooking regions in china,each one with it's specialities.chefs could specialize in one or more of the regional styles ,so ask what the chefs speciality is or if he has a certain style. [4 main styles are Cantonese,Peking,szechuan,Shanghai]each style has it's specialities ask
