Deep Purples "Lazy" from Made in Japan live version. Lords opening solo still makes my nipples hard.....hehehe

Anything with Chuck Leavell in it, like his solo in "Jessica" when he was with the Allman Bros. Lots of Mott the Hoople with Ian Hunter had piano and Ian always finds a great pianist for his solo records.

Sunnyland Slim, Professor Longhair, Art Tatum and Fats Waller all did great piano solos in blue and jazz. Oh, I can't forget McCoy Tyner, sheer genius.

In Latin Jazz, Eddie Palmieri is the master, by far.

A lot of the answers here are great choices, but they are organ of synth based songs. I do not love the group Lyn'rd skyn'rd, but the piano solo in the song "Call Me the Breeze" blows me away every time I hear it. I could play like that when I was younger,but not anymore (arthritis)

"Root Beer Rag" by Billy Joel is awesome, but they sped up the tape after it was recorded (You can't play along with it-it's out of tune with your piano even if freshly tuned)

Hum, that's weird. Did anyone mention Rick Wakeman's keyboard solo in "Roudabout"? That is awesome.

Also, the organ solo in Steely Dan's "Do It Again". Can't remember who did it, but it was good. The song also has a pretty good electric sitar solo.

Toward the end of Chop Suey by System of a Down there's a beautiful keyboard part that you kinda have to listen for, but it's seriously like the best part of the song.
