There are lots of new and mostly young classical musicians with their cds playing the music of the greats like Chopin, Bach, Mozart etc. How do we know if it's going to be music from the original pieces, or a varied and sometimes "discosized version" e.g. Maksim, of the original?

but like they said look for reputable orchestras
Berliner Philharmoniker
New York Philharmonic
London Symphony Orchestra
Chicago Symphony Orchestra
Cleveland Symphony Orchestra
Vienna Philharmonic
San Francisco Symphony

Those are the most reputable and skilled orchestras in the world so if you can find their recordings you are pretty well off.

By buying from reputable companies which will always state if the music on the CD is some kind of transcription. Sticking with well known artists who would not dream of making 'discosized' versions. I've never hear of the Maksim you refer to, for example, although I have been collecting records/cds for 50 years. Reading reviews in reputable magazines like Gramophone (which has a US edition, if that's where you live)

You could try looking up reviews on the web. Some stores have listening stations that allow to hear a copy of the CD. You could look up the CD on web store. You can often listen to selected cuts there.

Well, for one ... stay away from the boston pops, or anything listed in the 'new age' section.

There is enough synthesized crap on those shelfs to cause a unicorn to vomit moonbeams.

by the date it was written if it was made in then 1900's then ts classical if its above that it was copied.
