I have been using dehydrators for several years to dry paints like Testors and Humbrol. Most other people who use them just leave them in over night. I prefer to leave the model in for 16 hours. The way I like to do it is, put the dehydrator in a box or cabinet large enough the model will fit on a drying stand on top of the dehydrator.

I can't see where it would hurt, but make sure you don't get any paint on a tray that would eventually have food on it. Or you could mark one tray your hobby tray and never use it for food again. The dehydrator would give you constant heat/air circulation without having to hold or position it like you would a dryer. I don't think it would be faster, but you could leave it unattended.

try a hair dryer instead.
