If it's a poem or a song, can't you just count them? If it's a story or a book, choose three lines at random, count the words in each, and divide by 3 to get the average. Now multiply that number by the number of lines on a page, and multiply the result by the number of pages. The final result won't be exact, but it will be a good estimate.

Winter Holiday = 2
WINter = 1
HOLIday = 1
holiDAY = 1

That's four, I don't know if you can mix up the letters. For example:

WinTEr HolIday (WTEHI = WHITE)
wInTER = (ITER = TIRE)
etc
