The easy way... use whichever mix you prefer. then add 2 shots of Windsor Canadian club (per 4 servings), And cook till golden brown, the alcohol evaporates during cooking, and they are the lightest fluffiest cakes you have EVER had. Much better than anything from IHOP

Go to Foodnetwork.com and get a basic pancake recipe...from Paula Dean or Emeril Lagasse...then!

Add cooked apples to the batter(apples cooked in cinnamon, vanilla, brown sugar, and a little water, drain the liquid when finished cooking)...or/and
Add chopped pecans, walnuts, hazelnuts, etc, or/and
Add a little of cherry pie filling, lemon pie filling, or blueberry...
Add sliced bananas, chunk pineapple,or golden raisins...
Add 3 minute uncooked oatmeal, cinnamon, and brown sugar(instead of white)...
These are just what you can add to the batter....

You can cook the pancake on one side, add chunks of sausage, then flip the pancake in half, like a quesadilla, and keep flipping the pancake until done on both sides...

I haven't even gotten to toppings yet!

I made a perfect pancake the other night, I stirred up the batter and poured it into a glass cake pan, it turned out just like cake, and I poured syrup on it, it was good. =)

Add one egg. A dash of milk and some vanilla flavoring. Always cook it golden brown. Never under cooked or light brown.
