It's as tasteful as it gets...if that is the right term?? sits low..like 5" with a 29" seat height or something, has all of the cool old school looks. wrapped pipes..you get the picture.

The John Deer key is expensive and better than anything else out there, you would have to see it I guess.

HD wheels.. paughco is a good name, S&S carb and spyke single fire ignition?...low end? That v-twin brake is over 400 dollars. The wrap for the pipes is the same stuff used on ferraris

title is an HD title with a paughco serial number. Where I live that's a plus.

Insurance is 250 a year

3-4 grand depending on how "eye pleasing" it is.
With the popularity of bobbers maybe a couple of bucks more.
Not too many people are going to go looking for a rigid,iron head, sporty.

3 -4 grand max. the '79 was a good year to put in a different frame because the original had a lot of one year only parts.check into the serial number too. some times the title isn't upgraded,and in most cases the serial number goes with the frame so you wind up woth a secretary of state title . the insurance company will ask a lot of questions and it will be a little more to insure. an iron head will take a bit more maintanence then an evo. look closely at the craftsmanship. if it looks like an amatuer job, the same kind of workmanship has likely been maintaining it also.it sounds more like a $3000 dollar bike to me, if the motor ,clutch and trans are good.get rid of the john deere key switch .all the parts you have listed are pretty low end. But thats what bobbers are all about.
