Does the brain have any structure that is not found in pairs ie on both it's left and it's right side?

pineal gland. it's in the middle.

corpus callosum which bridges the left and right

Anything that is right in the center would not be found in pairs, though it may have symmetry. The hypothalamus is in the middle, for example.

What ecolink said - this would also include the 3rd and 4th ventricles - there are only one of each.

Unless you are very unusual.
