I found a kind of cheese made out of mare milk, so I want to know if you really can milk a horse.

Technically you can milk any female mammal that is lactating. Why is a whole other question.

I bought a mares milk chocolate bar at the Spanish Riding School in Vienna but never got around to eating it (lol... yes i forgot about chocolate). Its supposed to be really good. They're actually looking into mares milk as an alternate to goat or cow milk for baby formula. Mares milk is supposed to be the closest animal equivalent to the fat/carb/protein content of human milk.

Actually, I have heard of a historical reference of milking horses in Mongolia, but I am surprised to see many current references regarding horse milk.

Yes a mare can be milked. It does create some trouble though! But the milk is not tasty. It is too thin.

No. I really don't think you can milk a horse. When it said mare on the cheese it was probably referring to something else.
