Honestly, being only in the top 20% of your class and with those SAT scores (which are not disgusting, but probably not high enough to get into the specific schools you mention), this may not be the way for you to go right now. If I were you, I would get a degree in something other than business at another university, and would target going on for an MBA at one of these schools eventually.

Retake it! But first get some good tutoting programs to help you. That could be a tutor or good software. Most students who get a lot of prep help before do much better on the test. For one thing, youll be more confident with much practice before hand. Your extracurriculars are absolutely fantastic, and college admissions anywhere will certainly take a look at that. But try to even the field by having another go at the test. Many students do. I know how nerve wracking that test is. My hands were sweating so bad ( something that had never happened before), I could hardly hold the pencil.

Wow there have been quite a few answers so I'm sure you'll consider mine helpful, but spare some time to read this.
Your GPA is not attractive at all, and your SAT score can definitely improve.
But honestly, you have spectacular ECs.
You are not simply just wasting your time if you still have it.
Work as hard as possible to raise your GPA and test scores.
If they do improve over time, then write in the essay explaining to the colleges why you did so badly in the previous years.
Best of luck to you! Nothing is impossible.

The Cornell Hotel Admin. program says that for the average student that is accepted...71% got above a 600 on their SAT Verbal (so 29% got below 600) and 88% got a 600+ on Math (so 12% got below 600)...worth a shot, I think, especially since your GPA is pretty good and your extracurriculars are good.
For NYU, you need a 3.6+ GPA...and the middle 50% of admitted students got a 1300-1430 on their SAT's...so maybe...
I mean, they're mostly reaches, but might as well try.

It's not your SAT scores, but your GPA that concerns me. Being in the top 20% isn't impressive at all. The GPAs that are shown on collegeboard are unweighted. Most people have around a weighted 4.0. I would say apply anyway, though. You never know.

Let me tell you, extracurriculars are nice and all but students often use them to try to cover up the meat of your application: GPA/SATs. and frankly, your GPA is low for these schools... since it's weighted! Those schools expect mid-600s and up for SATs and that's just the average. Try to look at your other options.
