Your mother will have terms and conditions and a contract. The contract will state how many hours she is contracted to work and that it would be over a 7 day week with a rota given to her which varies.
The terms and conditions (working days, rota's etc) can be changed with notice. Usually 1 months written notice. If you don't accept, then you would follow a course of various meetings over a few weeks on where termination of contract will result if your mother doesn't budge.
The union would only be bothered if you're loosing perks, hours, money, holidays etc..
Just double check you get the entitled breaks by law.
The other thing is, tell her to go self employed and she'll soon get use to working 12 hour shifts, 7 days a week and what's a hoilday ??

Bosses have the right to re-set work schedules but your Mom should make sure that she is paid for overtime worked, should her twelve hour shifts result in her working over 40 hours per week. If she perceives that she is not being appropriately compensated for overtime, she should talk to the union rep. An employer could be in big trouble if they fail to pay overtime. I hope she finds a way to cope.

Think of it this way. She will get overtime. Unless it is 4 days a week. I would love to work 12 hours for 4 days and have a 3 day weekend.

Give it a chance. 12/12 shifts aren't that bad. I liked working that shift. Many people do!

There is nothing she can do besides quit. Hours getting cut or increased is up to the employer. At least she will get overtime or if not an extra day off!

I think they have to give her one months notice in writing before they can change the terms and conditions of her contract of employment.
That is if she has one.
if she doesn;t they can do what they like
