Hmm, the people I knew that ended up sticking with a performance major (given how difficult it is to actually get a job in performance) ended up getting their teaching certificates, and then became band/choir teachers for Elementary and High School kids. It was a way to stay with music, but also to be able to get an actual paying job with benefits. These same folks often play in some of the more local symphonies in their free time.
