The two by Brahms are fabulous and fairly well known. No.1 in B minor and No.2 in G minor performed by Van Cliburn are great examples of piano rhapsodies.
Then of course there is the Rhapsody on a theme by Paganini (Rachmaninov) - one of the best know of all.
Finally, there is Brigg Fair and Dance Rhapsody No.2 by Delius - especially if you like neo-romantic English music.

Don't forget Claude Debussy's "Premiere Rhapsodie pour clarinette et orchestre" (I don't like the second, for alto sax, but the first is simply beautiful and very well written).
