Between 3000 and 4000rpms should be just fine for your engine.

If it has a tachometer, which it probably does, it should have a red area at the higher end of the dial. The red line is the lowest rpm in the red area, this is the highest safe rpm you can rev to. Shift where it is comfortable for you and before you hit the red line. Don't over rev it will damage the engine OVER TIME it won't kill it immediately unless you go way past the red line if you can ( you may have rev limiter, an electronic means of limiting max rpms to safe levels). Ask Audi dealer if you have a rev limiter if you feel so inclined

The shift point varies with how fast you are trying to accelerate. Under normal acceleration rates, I would say that you can shift at around 3-4.5K rpm. The lower gears will be shifted at a higher rpm than the higher gears as a rule, since they are geared lower. Once you have reached your desired cruising speed, then you can shift into 4th or 5th depending on the speed that you are going.
