It's hard to say without knowing your age and your budget. Southbank does offer a lot of choices. You could take her to see the Andy Warhol exhibit at the Gallery of Modern Art, followed by dinner or snack at one of the many dining choices available in the area. The cinema also located in the area is really cheap too.

Go down to southbank, have dinner by the river. then go for a ride on the citycat and see what happens from there. If the date is going well you can always proceed to some bars or clubs for a few drinks. Plus the city cat or public transport can always get you back to south bank to retrieve your car if need be.
Remember if you are going to dinner, plan ahead and book a table!

You could go some where by the River like south bank to have dinner and then go for a nice walk along the river. Could be romantic?

something like a skatingring or a mall or movie theather
take her some where like that
