I assume that tamarino = tamarind, a tropical fruit.

The fruit is sour, due to natural acids, but also contains sugar. In the natural state, the sour acids overpower the sweet sugars.

When you add ash (which is alkaline) it neutralizes the sour acids. Then, the sweet sugars can be tasted.

Sour is the taste of acid.
Ash will contain light metal oxides which produce
bases, (NaOH, KOH, etc.), in water.
The base neutralizes the acid so the sour taste is gone.

Tamerino must be acidic and mixing it with ashes, basic, makes It taste sweeter.
