Don't know about Ghana but people in sub-saharan africa domesticated several varieties of (sweet) potato, yam. Africa is oriented north/south so it has lots of climate zones; an impedement to agriculture, travel. The fertile crescent in europe/asia is east/west; same length of day across the whole thing, much easier to domesticate plants and animals.

This allowed europeans to have the kind of surplusses which allowed the building of large sailing ships so they could get to and pillage Africa and the Americas. Africa, south/central america and north america are at a disadvantage due to n/s orientation = narrow climate zones.
