Why are flexors and extensors considered antagonistic muscles?

Because flexors oppose the action of extensors and vice versa. Consider the muscles of your upper arm. The biceps provide flexion and the triceps provide extension.

Because antagonistic means opposite action, therefore flexing and extending are opposite pairs of muscles.
