Because the Victorians needed their servants to work on Christmas day to make a big meal & attend to all the guests etc. So the servants had the day off on Boxing Day and were given a box with a present (like a new apron etc.) and some food and money in it so they could have some time to celebrate too.

The term originates in Victorian era Britain, for the day after Christmas, when the rich would box up gifts and bring them to the poor, and also to their own servants (for whom Boxing Day, unlike Christmas Day, was a holiday). The Christmas carol Good King Wenceslas sings about giving gifts of flesh, wine, and pine logs to a poor man on St. Stephen's Day.
The term also refers to the fact that children traditionally opened their money-boxes on this day to access the money they had received over the Christmas period.

Tracy is spot on with her answer.
Boxing Day was the day when tradesmen like the milkman were given a Christmas Box. They used to have Christmas Day off as holiday but were expected to be back at work the day after.
