I must know why Lennie's or George's dreams are important in the story. (example) For one independence? I do not know.

This dream gives reason for existence. A purpose and goal in life. Better than just dreaming of the next weekend in the 'cat house'. This dream is worth the labour and effort that living requires.

Yes, independence was important and working for their own benefit. With this dream the hard work would result in better lives for them.

Have goals and you will get somewhere, without them you will be stagnant and die.

The best laid plans of mice and men may oft gang a gley but when they do, get another "plan" or dream or you will to.

Their dream (which is to have a little farm house of there own and live off the fat of the land) motivates them to keep finding new jobs and raise money.
