Unfortunately, you got a lot of National Treasure answers, because the internet is full of this stuff. The pyramid was suggested as a symbol for the Great Seal of the United States by William Barton who was on the Great Seal committee in 1782. It was a popular image of the day, suggesting the strength of the ancient pyramids, and also adopted by the Freemasons during the same era, because of its connection with stone masons. The interesting thing about Barton's pyramid is that it is unfinished, and has 13 steps, for the 13 colonies. The shape is completed by the "all-seeing eye of God", providing a visual meaning to the motto, Annuit Coeptis, which means, roughly, "He has shown favor on our beginnings/undertakings" It shows a belief that Divine Providence has looked at the beginnings of our nation and will continue to provide as we build it.

The Great Seal was put on the back of the one dollar bill in 1935. There is no Masonic connection -- sorry to disappoint the conspiracy folk out there.

Francis Bacon was the integral leader and regenerater of a previous generation of Freemasons who developed a great interest in learning mythology and using symbols as part of their education. The "eye in the pyramid" is a well-known Masonic symbol.
Loosely translated, Annuit Coeptis means "He has given approval to our undertakings." This is in reference to the symbol of an eye above a pyramid (sometimes called the 'All seeing eye') which is a representation of the deity. Freemasonry was a clear influence on the Founding Fathers. The Novus Ordo Seclorum or New Order of the Ages was the beginning of this new spirit.

In the Novum Organum Bacon writes,

"...the Sun enters the palace and the privy alike and is not polluted thereby. We raise not a Capitol or Pyramid to the pride of man, but a Holy Temple in his mind on the model of the Universe, which model we imitate. For whatsoever deserves to exist deserves to be known, and knowledge is the image of Existence. Now the mean and the splendid alike exist..."

Many of the founding fathers and their associates were members of the secretive group known as the Masons. George Washington and Thomas Jefferson to name a couple. the symbol you're referring to on the dollar bill is known as "the Illuminati" which is buried in the many sercretive practices of the Masons. I believe these influential gentleman caused the symbol to be used in the currency designs.
