I recommend Charing Cross, it's very easy to get from Charing Cross Northern Line to Charing Cross mainline station. Trains leave there at 23 and 53 minutes past the hour throughout the day to get direct to Canterbury West, journey time of about an hour and a half.
If you use London Bridge then you have to get the Hastings service and change at Tonbridge, not as straightforward.

The London Underground is in London only (except for the Northern reaches of the Metropolitan line). Canterbury is in Kent and no ondon underground line goes anywhere near. You need to take National Rail from Cannon Street, Cahring Cross of Victoria to Canterbury East or Canterbury West. The journey is about 1.5 hours whichever route you take.

If you really want a the tube train that is closest to Canterbury it would be Lewisham, which is on the Docklands line. However, it's a thumping long way from Canterbury which is in Kent. You can get a mainline train from Charing Cross, Waterloo, or London Bridge, it will take about an hour.

None of them are close. You have to take a regular train to get to Canterbury.
