Sports games for the most part are the same all across the board, if you like them on one system then the experience will be 90% similar on any other system.
The best shooter on the PS3 is probable still Resistance: Fall Of Man but Killzone 2, and UT3 aren't too terribly far from release. There's also other pseudo shooters like Uncharted and Ratchet and Clank that are also fun.
Racing games, I'm not sure but Gran Turismo 5 is also coming out before too long and that game looks stupidly awesome.

Having a PS3 and an xbox I would desire to declare that between the rest I easily have performed Uncharted 2 is the main suitable recreation I easily have ever performed on any device! till now you purchase any recreation, be sure you play that one!
