Just in regards to your question... REM sleep is when you have your most vivid dreams. Your vital signs increase, and brain activity increases. You can also dream in the other stages of sleep (stages 1-4) but the dreams aren't as vivid.
One thing.. if you're lacking sleep, your body will spend most of it's time in the deepest stage of sleep, stage 4. And in this stage, of course you can dream but it's not as vivid.
I don't know if any of this helps, any questions you can email me and I could go get my textbook =P

Its a wee bit more complicated than that. In order to reach the REM rapid Eye Movement stage you need to enter the first stage.

I think you should say a little prayer before you go to sleep that should help you. I use to have really bad dreams where i couldn't move my whole entire body. Well, every night i say my prayers before i go to bed and finally i get a good night sleep try it, it works for me.

You actually always dream - you just remember them when you wake up DURING REM sleep.
