there is this loud burst of music so the audience will wake up. then it is quiet again..?

There are so many. Another I would add to the list given in the first answer is the Coronation Anthem 'Zadok the Priest' by Handel. Then there is the chorus from Haydn's 'Creation' 'and God said...let there be light....and there was LIGHTTTTTTTTTTTTTTT

At least Haydn's Symphony no.94 has this effect, as has Bolero by Maurice Ravel... And from contemporary composers, there is also a similar effect on "Benedictus" from "The Armed Man Mass For Peace" by Karl Jenkins.

There are many pieces that have this effect.

Symphony No. 94 "Surprise" (appropriately named) - Haydn

Symphony No. 9 "New World" - Dvorak

Symphony No. 6 "Pastoral, Mvmt IV" - Beethoven

You're probably thinking of the Surprise Symphony (Haydn's No. 94)! :)
