for ex when i have to slow down in 3rd gear going 25mph for a turn and shift it into 2nd. i shift into second but hold the clutch around the corner so the car slows down more. then even when the speed is like 18pmh and i slowly let out the clutch it slows down. why when its in the right gear. also when i instead leave it in 3rd my acceleration is too slow. how do i do it corectly so it dosent jerk or slow down.

It just takes practice. Different cars and transmision and engine combinations have different shift pionts. Sounds like you should be in second instead of 3rd when accellerating. The owners manual will usually explain your vehicles specific reccomended shift points

Many standard transmission vehicles will run in third gear at speeds as low as 15mph. You must practice until you instinctively choose the right gear for your vehicle.
That said, 18mph sounds kinda fast even for a left hand turn? Maybe try using the brake?
