Most people naturally favor one side or the other, but my son is ambidextrous, I have a feeling that as he grows older he will become strictly right handed.

Humans are born with a tendency toward favoring either left or right-handedness. But if "caught early", some people can be trained to be the other way.
It's astounding what teachers used to do to try to make kids be right-handed because that was obviously the "right" way. Ask some older folks about it.
What I find interesting is the prevalence of left-handers in the state of Utah. Is it the water? (The water is pretty bad there.)

Humans use the hand that they feel comfortable using. No one is born to be a rightie or leftie.

I believe that it is a combination of the two. Myself for example. I believe that I was born a righty. But, my older brother, a lefty, loved having a little brother so much that he taught me to do a bunch of things left handed. so now, i eat, and write with my left hand, but throw, bat, bowl, and catch right handed.....So you have a natural inclination to one, but you can be trained also.
Random fact: left handed people tend to use the right side of the brain, while right handed use the left...

I;m sure most are born right or left. When I went to school, lefties were punished and forced to use their right hands.

it was used to be believed that environment causes left-handedness. now, in 2007, researchers discovered LRRTM1, the first gene linked to increased odds of being left-handed. The researchers also claim that possessing this gene slightly raises the risk of psychotic mental illnesses such as schizophrenia.

I have three of my own and have worked with young children for many years. Children will show a preference very early without any prompting.
