I was thinking about a Chevy Equinox, are they any
good can you do light towing with them like a boat,
jet skis or a small camping trailer? or should I go
with a Trailblazer if I will be towing?

Yeah they should be fine with light towing. I'd look at something like a used Lexus RX330 or Acura MDX. They are all around nicer SUVs.

The Equinox is based off of a unibody car platform. It may be able to tow for a short while but you will have more issues with transaxles and CV shafts breaking. But if towing is going to be a regular occurence I would go with the Trailblazer. The Trailblazer is a full framed truck platform . You can get good gas milage out of the 5.3 liter V8 with Displacement on Demand. The Inline 6 can be had for less money but gas milage suffers under the weight of the vehicle. HTH
