why might a scientists prefer to use the lower powers of a light microscope to observe aspects of unicellular organisms?

Some of those guys move around so fast that you'll never see more than a flash if you use a really high power on your microscope. And some are so large that you won't see the cell as a whole on the highest power - just a part.
