We got the technology to go to other planets and we find a planet with a civilization with 14th century technology. How would react? What would we do?

By the time that happens, the right rules of engagement and the right people to employ them would be in place. I believe the Star Trek non-interference policy would apply. I'm not quite as pessimistic as ed. Interstellar technologies should have evolved beyond that kind of primitive behavior. Even ours.
(You do know that there is no such planet or civilization in our solar system, right? That is known with a high degree of confidence.)

we take over if they are inferior, we lie to the citizens about our intent .. we enslave them and use up their resources
