I need to know if the if the James Bond Ultimate Collector's Set includes all of the James Bond movies?

Does it include ever James Bond movie ever? Does it include Casino Royale?

...that is correct; the set has ALL of them!!! (...that is, everything, NOT including "Never Say Never Again" and the 60's comedy version of "Casino Royale", both of which were not produced by MGM and EON Productions)
