There is a number of capital ships in the "Museum" and in separate missions, but I have never encountered any warship bigger that a River escort destroyer during the campaign. Where are the battleships, escort carriers and the rest of the good stuff?? Help!!!

I'd like to give you more information but unfortunatly I just restarted the dynamic campaign from Wilhelmshaven and have been coming across the occasional freighter.
I suspect that after you manage to get past 1939 and the better part of 1940 you may start to see more and more capital ships. My PC version came with a chart that has the Kriegsmarine grid on it and shows convoy routes, heavy naval traffic for convoys and general areas where there is expected heavy naval traffic passing through.
I suspect for the most part you'll actually 'stumble' across these ships if you come across a convoy route and it'll be strictly by chance. For the most part you receive orders and are more interested in freighters than anything else. Naturally sinking a capital ship is quite a bonus but I don't think that you're going to catch too many of them alone and without escorts.

after mid 1940 you can always find a Fiji ( Colony Class) light cruiser around 10k tons in loch ewe Scotland they keep respawning there after 1941 when America gets involved new York is easy pickings but you need a type IX to get there your best scores can be found in the carribean curocou I believe is loaded with tankers and is over 300 meters deep a good skipper can come out with over 40k tons if he does it right just watch the rest of the British carribean ports they are really shallow
